Explore the history of milk consumption and how consumer choices, culture and sustainability shape today’s dairy demand.

Kiwis have one of the highest rates of domestic milk consumption in the world. Milk has traditionally been consumed in European culture and was brought to New Zealand as part of colonisation. Students will be introduced to the history of milk consumption as it has impacted current attitudes towards milk.

In the present-day milk consumption has boomed around the world, with demand growing in Asian countries. Consumers make choices and drive demand for milk products but why is there so many different brands of “milk” available at the supermarket and what is the difference? Consumer decisions are based on several factors including taste, nutrition and sustainability.

Students will explore consumer perceptions and differences in milk through sensory science via product taste tests.
